Clam Bisque
To Serve 6
3 dozen hard-shell clams (see page 2), each about 3 inches in diameter, shucked (about 3 cups), with their liquor reserved
4 tablespoons butter
1/4 cup flour
1/4 teaspoon crumbled dried thyme
1/4 teaspoon freshly ground black pepper
2 cups light cream

   Put the clams through the finest blade of a meat grinder, or purée them in an electric blender. Strain the clam liquor through a fine sieve lined with a double thickness of dampened cheesecloth and set over a bowl. Measure and reserve 2 cups of the liquor.

   In a heavy 2- to 3-quart saucepan, melt the butter over moderate heat. When the foam begins to subside, add the flour and stir well. Then, stirring the mixture constantly with a wire whisk, pour in the clam liquor in a slow thin stream and cook over high heat until the mixture comes to a boil, thickens lightly and is smooth. Reduce the heat to low, stir in the clams, thyme and pepper, and simmer partially covered for 15 minutes.

   Stirring constantly pour in the cream and simmer for a few minutes longer to heat the clam bisque through. Taste for seasoning, ladle the bisque into individual heated soup plates and serve at once.
